Salmon with coconut curry

Sweet, spicy and sour, it is Thai inspired dish.

Ingredients

600 gram salmon fillet (4 fillets)
1 tablespoon ginger paste
4 cloves garlic 
2 tablspoons Red Curry Paste (or 1 full tbsp curry powder)
1 Lime 
salt (to taste)
black pepper (to taste) 
1 tablespoon chili paste 
2 green chili pepper 
1 teaspoon brown sugar 
400 ml Full fat coconut cream(milk) 
4-6 basil leaves 
2 tablespoons olive oil 
1 chopped red onion
1 finely chopped green onion
1 tablespoon fish sauce

Method

Salt and pepper each salmon fillet.

In a large pan on medium to heat heat, add olive oil and sear the salmon skin side up and sear for about 1 minute until light golden. Then transfer the salmon to a clean tray and set aside.

Using the same pan you seared the salmon, add 1 tablespoon oil, red onion and ginger and cook until carmelized. Then add the garlic and sugar and cook until garlic gets light golden. Then add the curry paste, chili paste and the green chili and fry for 1 minute

Then pour the coconut milk and fish sauce and stir. Allow the sauce to simmer for 2-3 minutes. Add salt and pepper to taste. Then add juice of half a lime and 2-3 lime slices. Then add the Thai basil and the green onion and stir.

Lower the heat and add each salmon fillet in the sauce and allow to simmer for 4-5 minutes or until salmon is cooked. Garnish the curry with some red chilli and parsley then Serve it with some jasmine rice or bread!

Cooking Tips

It is highly recommended to use thick and creamy coconut milk don’t use the watery one.

You can replace the fish sauce with soy sauce, but it will give you a slightly different flavour.
